Since winter is still lingering on, I thought one more winter recipe was called for!  Enjoy!

Winter Lemon Cake

6 Eggs

2 tsp. Lemon rind

2 Tbsp lemon juice

1 c. sugar

½ tsp salt

1 c. cake flour

 

Beat egg yolks 5 minutes with lemon juice and rinds.   Add sugar and salt, beat on medium speed 6 minutes.  Add flour just until mixed, and beat on low.  Add ½ egg whites with flour at same time.  Beat egg whites until stiff.  Fold ½ of egg whites with flour mixture.  Bake at 350 degrees for 20 to 25 minutes.

 

Icing

 

1 ½ c. sugar

½ c. flour

2 tsp lemon juice (rind opt.)

2 eggs

 

Beat real good, cook until thick.  Cool completely.  Add 2 cups (carton) of Cool Whip.  Put on cake.  Pan size is 3 round or 1 (13 x 9 inch).  Put was paper in pan and spray with Pam.
